The “go” or “ghiozzo”, is a tiny fish found in the muddy bottoms of the Venetian lagoon, a fundamental ingredient of the risotto alla buranela.
The go lives with its mate in burrows where it hides all of its fertilized eggs, thewith a dark back and a golden belly, once considered a humble fish, a dish of go today commands a high price, given how difficult it is to catch them.
