The “go” or “ghiozzo”, is a tiny fish found in the muddy bottoms of the Venetian lagoon, a fundamental ingredient of the risotto alla buranela.
The go lives with its mate in burrows where it hides all its fertilised eggs,its dark-coloured back and golden belly.Once considered a humble fish, nowadays a go risotto is paid for handsomely, given the difficulty in catching them.
